Why am I being charged $36.99 in Australia for an app-addon that is $29.99 in the US, when the Aus dollar is currently worth 1.07 the US dollar???

The rates of exchange are set by Apple for all in-app purchases.

I have purchased approx 30 apps so far....and the exchange rate is close to correct for most of those purchases. The difference in the case of the Easy Books pricing is a blatant rip-off for Australians!!

I do understand. I set the price tier that applies worldwide, and unfortunately for you, Apple set the exchange rate at a bad rate for you.

I would encourage you to read the page http://forum.maccast.com/index.php?/topic/18218-over-prices-apple-s... which contains a complete discussion.
