Hi, does easybooks log who incoices/recieots have been sent to?

There is no tracking of where invoices have been sent. You can pick where to
send the PDF invoice, you can print it, email it, or share it with iTunes.
Where it goes from there is up to you of course, but if you send by email
you might find a history in your sent items box.
