I am a complete novice at book keeping, new company started 6 months ago just as I purchased easy books. Wasn't VAT registered at first and now have reached VAT threshold and need to be registered, if I set the Vat now will it alter the previous 6 months books?

No, you can set VAT now and it won't affect any values you've already entered.
